   There are a few foods that EVERYONE loves. Ice cream is one of them. My favorite flavor is peppermint stick. A few ice cream stands have it available during the summer but Friendlys always sells it in December. This is why I started making hot fudge sauce for Christmas gifts. There is no better treat than a bowl of peppermint stick ice cream with hot fudge sauce and a Hallmark movie.

   I always use the best ingredients I can find when  creating in my kitchen. I think sugar is sugar and flour is flour,regardless of the brand name on the label. There are however differences in cocoa and vanilla. I buy my full fat dutch cocoa from Penzys Spices, https://www.penzeys.com/. Believe me it DOES make a difference. My sister in law, Diana, gifts me with Mexican vanilla that she purchases while vacationing in Cancun. I always bake with butter and do not substitute.

   This same recipe makes a fine fondue for party tidbits. Each batch will make about 5 cups. It must be refrigerated so make that known to the recipient.

INGREDIENTS: Hot Fudge Sauce

2 cups unsweetened cocoa powder

1 1/2 cups sugar

1 cup light brown sugar

2 cups heavy cream

1 cup butter 

2 teaspoons vanilla

Combine cocoa and sugars in a heavy saucepan. Add butter cut into small pieces and cream. Place pan over medium heat and bring to a boil. Allow to boil for 90 seconds, stirring constantly. Remove from heat. Cool slightly and add vanilla. Allow to cool for a few more minutes. Pour into small decorative glass containers with tight fitting lids. Store in refrigerator for holiday gift giving. Keeps well for 2-3 weeks (if it lasts that long).
